Origin
Yerba mate was traditionally used by the indigenous Guarani, Quechua, and Aymara peoples.
The term “chimarrão” comes from the Spanish word cimarrónmeaning “livestock that returned to the wild.”
In the 16th century, Spanish colonizers banned chimarrão, labeling it the “devil’s herb.
Preparation
Chimarrão is prepared with ground yerba mate and hot water.
It’s important that the water does not boil, as boiling burns the yerba and makes the chimarrão bitter.
More than just a drink, chimarrão is a social and ceremonial ritual.

Tradition
The cuia (gourd) is considered a sacred object in many homes.

Traditionally, the preparer drinks the first chimarrão as a sign of courtesy.
It is not customary to verbally thank for the mate received.
